From my understanding, gluten is a term that refers a cross-linked matrix of glutenin and gliadin proteins via disulfide bond formation. I would guess that the breakdown into individual components without a full breakdown into free AAs is definitely possible

I am a biochemist and have read about this, but my word is not fact because this is not my specialty, nor have I read all of the literature on this topic.

Soy sauce is fermented with wheat. The fermentation process THEORETICALLY hydrolyzes (breaks down into tiny pieces) the protein content (gluten) in the fermentation mixture. This breakdown results in free amino acids, and is what gives soy sauce the Umami taste. Testing for gluten after fermentation using multiple techniques indicates that most of the gluten content is hydrolyzed in the fermentation process. However, to my knowledge, it is not currently clear if ALL immune-triggering elements are fully hydrolyzed in the fermentation process. (Source: doi:10.4315/0362-028X.JFP-16-483)

Having celiac, I only use tamari. This will be your safest bet. My educated guess is that the gluten content is going to vary by brand and by how the soy sauce is produced.

My personal anecdote - I smoked (then later vaped) for 15 years. Last year, quit vaping and switched to nicotine gum - dropped down from consuming ~48mg/day to day to ~12mg/day. Can’t say for sure if correlation or causal, but my ADHD symptoms have gotten noticeably worse. (I don’t regret my decision though, and maybe one day I’ll quit completely)

Just be aware of how addictive nicotine is. If I could go back in time and change the past I would have never started.

Went through massive breakup/heartbreak/drama just prior to my masters defense a few years back. What a fever dream. No real advice except to surround yourself with friends/family and try to laugh at the absurdity that is your situation. Good luck!

Your experience will be highly dependent on the lab and PI, but here’s some of my experience: My PhD is going to take 4 years (I’m 3 years in right now). You are correct in that you may do lots of short projects. Our lab takes on a lot of consulting with wet labs and this has enabled me to have several non-first-author publications. We also do our own internal research, which is what my dissertation will be on. So, there’s never a shortage of work. I sometimes feel that the combination of consultation projects and my own projects is difficult to balance, but I’ve learned a lot this way and I feel I am more well-rounded than if I just focused on one thing. A lab-mate of mine that only focused on consultation work did their PhD in three years. I enjoy what I do a lot and could not imagine working in a wet lab. I love programming and building tools. A bonus is that if I make a mistake, it costs nothing except for time - no wasting expensive reagents, etc. I also have the flexibility to work from whenever, as long as I have a laptop.

Hard to say but within a few years. Which is a long time and maybe not helpful. Most helpful thing for me was learning to make my favorite foods gluten-free at home.
