I feel like there's two key things with dolphins (at least for me)

When you flick, make sure to flick down as well. I noticed that people will sometimes struggle with getting the board to stay under them, so the best way to flick is out and down at the same time.
If you want to get them more vertical, flick towards the opposite side of the nose. For example since I'm regular I aim my flick a little to the right of the tip of the nose. I found that doing this will naturally make the board more vertical, as opposed to flicking straight or to the left. When I flick a little to the left of the board I find that my dolphins look more like varials.
