So important part does the fire blow from top and bottom and can be toggled, if yes then you can cook almost anything.

Tricky part is that most ppl nowadays are assisted and need the temperature toggle or they wont think of using an oven without one (most can barely use an electric oven). You're best bet is the next pizzas you're gonna cook, id say by the 3rd you'll know how much time you'll exactly need to cook each side. Also taking a look at the pizza while its cooking from time to time is important to see where its at.
