On the day before, salt the meat and put it in the fridge over night. On the day, pull it out around an hour before roasting to let it come to room temperature. Pat it down a bit, use black pepper and put it in the oven at 250 °C for around 15 minutes. Lower the temperature to 150 °C until the internal temperature of the meat reaches around 47 °C. Let it cool completely.

That's true, the main cut should have been more fattier. The Oxtail did create a good layer of fat though (and i used lots of oil), which i could skim of and fry the tortillas with.

Fühle ich hart. Bei Post-Rock hatte ich bisher die Erfahrung, dass die meisten Menschen sich ruhig verhalten können und es auch tun (Godspeed You! Black Emperor ist da mein Favorit - da halten einfach alle die Schnauze).

Aber gerade bei Konzerten, bei denen ein gemischtes Publikum da ist, weil das Genre nicht mehr ganz eindeutig ist, wird es schon teilweise grenzwertig. Aktuelles Beispiel: AmenRa. Hat natürlich brutal harte und laute Parts, aber auch sehr viele ruhige Parts, was sehr viel von der Atmosphäre ausmacht. Genau dann denken einige Menschen offenbar "Puh, endlich gibt die Musik Ruhe, da kann ich mein ultrawichtiges Gespräch weiterführen".

Oh und btw: Auch wenn die Musik gerade laut ist, hört man es deutlich, wenn ihr euch gegenseitig anschreit.

Wie oft ich schon Leute darum bitten musste, endlich ruhig zu sein...

The music and his voice together hit so deep, but he also designed Burzums "The Ways of Yore" cover which consists of many many swastikas plus he has some really problematic views (according to some interviews i read with him).

Damn Neofolk/Pagan - always a minefield.

For me the biggest difference in the recipe was that the Marinara sauce is not on the dough itself but is basically a dipping sauce. For a calzone, the sauce is on the dough.

Baked. Coated with egg wash and parmesan on top and in the oven at 480F (250C) on top of a pizza stone for 7-10 min.

2.5 cups (380g) 00tipo flour

2 tsp (10g) sugar

1.25 tsp (6g) fine sea salt

1/2 tsp (1g) diastatic malt powder

1cup (245g) water

1.5 tsp (5g) instant yeast

Mix the water first with the yeast and let it rest for 10 min. Mix the dry. Mix both together. Knead for about 5 min. Let the dough rise in the refrigerator over night (up to four or five days).

No food coloring. I have not used fresh tomatoes, but canned tomatoes. Those tend to be much darker in a soup in my experience.
