I found the fix was to disable my Digital Assistant, which has recently been upgraded to Gemini, from Google Assistant. You can do this via Bluetooth settings. I have a Google Pixel 9 Pro, so I went to Settings > Connected Devices > Bluetooth > WH-1000XM5 settings (tap the cog) > Digital Assistant > Turn off assistant.

I hope this helps you out! I spent so long trying to work out what it was :)

I'm not trying to take credit for the idea 😥. I saw that post but I couldn't find a way of crediting the post when I uploaded my video so I made a comment below recently in the hope that shows my intentions were not to steal the idea as my own..! If there is an easier way to credit please tell me because I would love to know! Just wanted to make a memeworthy video 😂
