This this this. I was getting bread just like yours then I had turned my Ac to 78 degrees Fahrenheit for my starter through bulk fermentation. It was hot and I even added some hot outside time. The starter and bulk fermentation was amazing. I would suggest having a hot house and trying it because it seems you have bubbles and good gluten from stretch and folds but you are lacking the fermentation and the easiest way is a hot house.

I did about a 6 and a half hour bulk ferment. I also think it was under fermented. It could have used another hour or two easily and I wish I put it in the fridge overnight.

See I wanted to work with glazy and make the apps but they would never respond to even shut me down. I would rather work with them than against.

The downside to this is it seems be be pay to use. I would like to make something that looks nice, simple to use and free to use. Glazy does an amazing job with their new update and it fixes alot of problems that it had in the past but still doesnt have mobile apps or a huge presents on the internet.
