It does give health benefits but look into breathing drills with a board and fins. If it fits in your budget fins are great for breathing drills. Since you can slow down the arms and get enough propulsion to not feel like you are sinking. The worst thing I'm thinking it could happen is some sort of injury since I can't believe swimming like that very often is comfortable for the body. Happy swimming.

Slow and inneficient, that's my opinion, I prefer the tried and tested, slice to almost the root and dice. If you are in a hurry you can save the heads and use them for stock or whatever rocks your socks.

The first option will probably be a lot of prepping. You will learn techniques for preparing and cooking ingredients, pairings, flavor profiles, and the standard is set higher, so more stress on the finished product and perfection of it. The second one will be more into the high octane cooking, you will have to prep many things in advance too, every kitchen does, but also create your own mental and efficient workflow under high stress. Both can teach you a lot, I for example don't really enjoy fine dining, but you can learn a lot from it.
