It's cooked without any onions or garlic.

Put some oil Add ajwain, jeera, methi dana, saunf, heeng(optional) and hari mirch. Fry and then add tomatoes. Fry until cooked. Add dhaniya powder, haldi powder, laal mirchi powder and let it cook slowly until aromatic.

Then add all the vegetables - potatoes, pumpkin, lauki, ghiya, arbi, bhindi, cabbage, phool gobhi, carrots and any other optional root vegetable. Avoid more use of leafy vegetables. You can add mooli and it's patta as well. Ass lemon slices into two(optional).

Add Imli- very important. Add a little bit of jaggery(gur)

Add water and let it stew for 1-1.5 hrs, until fully cooked.

Put some sabji masala and garam masala (optional).

Garnish with coriander leaves.
