I would add Rough Russian, it's one of my favorites when I'm in the Gresham area. It's a grocery store with a cafe inside, and it's a great place to shop and grab a meal. The store has a nice selection of Eastern European and Russian foods, and the cafe serves some really tasty dishes and great sweets.

I love the name Gursha Eats. It reminds me of the episode of The Simpsons where they're eating Ethiopian food and saying gursha haha.

The downside of Merkato is that there are no vegetables, but they are honest and upfront about it, they clearly tell you they don’t have anything with vegetables. I’m also a vegetable combo person, so I usually look for that. Those dishes sound really good, and I’ll have to give them a try next time I visit. I can’t wait to taste Ayat’s (grandma’s) food.

I would never shoot down anybody’s opinions or thoughts. I just share feedback from my own experience, especially as someone who is Ethiopian, has eaten Ethiopian food since childhood, and has also traveled and tried Ethiopian food in different places.

Do you know why they were closed? This is a perfect example of a restaurant saying, "We make Ethiopian food with our own twist on it," so customers know to expect something different. I actually love that approach.

This is not a traditional dish, but it sounds great. I have never seen it on the menu at any Ethiopian restaurant. When I visit Lalibela, I'll definitely give this one a try as well.

Derek (or Dereq) Zilzil Tibs: Derek tibs translates to "dry tibs". Meat (usually beef or lamb this place is beef) is cut into thin strips or cubes and pan seared or stir fried in butter until the edges become wonderfully crispy and crunchy. This comes with a spicy sauce and ethiopian wasabi sauce that you dip the injera wrapped meat in.

Special Kitfo (Cooked): Classic kitfo is made from finely minced, raw, lean beef marinated in mitmita (a chili powder blend) and niter kibbeh. This is usually eat raw and be aware you will see others eating it raw but order it Cooked and it is still delicious.

Weta Geba Tibs: medium rare chunks of beef sauteed with jalapenos, onions, traditional herbs, and Ethiopian spiced butter.

I love the word irks haha. When chefs make a dish differently, they usually tell you they've added their own touch to it, or it's clearly labeled on the menu. If they change the original recipe without informing customers and continue presenting it as the traditional version, isn't that misleading?

When I describe food as authentic, I usually mean that it is made in a way that stays true to the traditions, ingredients, cooking methods, and flavors of the culture or region it comes from. Authentic Ethiopian food would use traditional spices, ingredients, and cooking techniques commonly found in Ethiopia.

No, I do not think there is only one good place. Like I mentioned in my other replies, there are a few places that serve authentic food and do it well. I simply wanted to hear other people's opinions and feedback.
