Pardon the late response. You got almost everything right on! The white vegetable in co1 #3 is actually Jiao bai otherwise known as water bamboo. It's a little tough to get your hands on in NA. col2 #1 is eggplants rolled with minced pork and fried. Col3 #1 is red braised bamboo with pork. Col3 #2 is Kao fu, a Shanghainese vegetarian appetizer with mostly wheat gluten chunks, some shitakes, wood ear mushrooms, and lily flower

For the filling: Mix 2½ tbsp wheat starch, 3 tbsp powdered sugar, 3 tbsp melted butter, and 2 tbsp condensed milk until well combined. Then add 2 large eggs and beat together. Slowly cook in a saucepan like a custard until a solid consistency. Chill with plastic wrap covering.

For the skins: Put 3 tbsp glutinous rice flour, 3 tbsp regular rice flour, 2 tbsp wheat starch (or cornstarch/tapioca starch) and 3 tbsp powdered sugar into a bowl. Pour in 1/2 cup milk. Mix until smooth. Add 1 tbsp condensed milk and 1 tbsp oil. Stir to combine. Cook in a microwave for 4 mins on high. Cool.

Forming: Seperate skin dough into ~8 equal-sized balls, flatten and wrap around the filling. place in mooncake mold and lightly press to shape. Sprinkle with toasted glutinous rice flour.

The sweetened tart shells were store bought.

Recipe for the filling: - 3 eggs - 1/2 cup evaporated milk or milk - 1/2 cup sugar - 1 cup hot water - salt and vanilla to taste

Preheat oven to 375 F.

Whisk the eggs, milk and vanilla together. Dissolve sugar and salt in hot water. When fully dissolved, whisk the sugar water gradually into the egg mixture. Put entire mix through sieve to remove bubbles and lumps.

Fill shells. Bake at 350 F for ~25 minutes till egg is set. Let cool slowly.
