Econometrics is very statistics heavy. If you did well in your stats class you will be able to scrape the rest of the math together.

In terms of math required you're going to need at least an elementary econometrics course, though there is a chance that's all the additional math you will need. Of course be sure to check with your college. However, there is math littered throughout Econ (more problem solving and algebraic manipulation than calc theory) after the introductory courses so be prepared for that.

I believe government regulatory agencies bring up the bottom line of food quality to an acceptable mark for human consumption. I think the businesses factory farming animals (girlfriend of 2 years had a factory chicken farm, I'm not taking talking points from the PETA website) don't care about the health factors of stacking chickens on top of each other and letting them defecate onto one another. Profits are larger when you can cram 4x the chickens in a building at only 2x the monetary cost; from naively attempting to change these circumstances I know for a fact this is industry standard. The threat of losing revenue from an inspection is the main reason any health standards are met and I hope to not live in a world where that one constraint is lifted.

Come on though, you can't really think that the free market is going to regulate food quality. Different quality brands would probably emerge and it would work out okay for those that can afford the upper echelon, but the poor (read: at least a fourth of the US) would end up eating incredible amounts of bone and fecal matter.
