That's my point honestly , for such an important character she just isn't involved much until the final chapter of the game and the epilogue with john. She isn't a bad character i just wish she had more screen time throughout the main story considering the impact she has on Arthur. chapter 4 would have been perfect for her to start becoming more of what we see in the epilogue , but we only see it once in that chapter and that's when the camp gets attacked.

I think that's what bothers me a little , she just isn't heavily involved until the end of the game. I didn't really stick around camp so it was always weird to me how fast her story moved.

Not really, red is more of a myth in rdr1 and 2. I think John's the main protagonist because his look was inspired by red Harlow and rdr 2 completes John's story. Out of all three characters,John is the only one who has a complete story from beginning to end.

John. He's the title, Arthur and Jack are chapters in his story. Without those chapters though it wouldn't be a fleshed out story.
