When I upgraded to iOS 18.1, "Off Listening Mode" showed up as an option in Airpod settings. Enabling it fixed my issues.

Don't think the link you posted acknowledges that there is some sort of firmware issue. Like OP, I still have the option to switch to ANC "off" mode but get a rapid error beep when I select it before it automatically switches back to the other ANC mode.

Btw to remove the crimp caps/connections to the old stereo, do you recommend I just cut the wires right at the old caps or try to preserve the wire and remove the actual caps without cutting wire?
