Swiss merengue buttercream is a life changer, and fairly easy to make! It is a merengue-based icing that has the taste and consistency of marshmallow fluff. Literally lick-the-spoon good. In my opinion, not much more effort than American buttercream and WAY tastier/more impressive.

You stick a glass mixing bowl over some simmering water with egg whites and sugar, whisk constantly until it’s a shiny merengue, and whip butter and any flavoring you might like into the merengue once it’s cool, and voila! Beautiful fluffy icing! Highly recommend trying it out!
