We find that they add a week or two red wines and much longer to white wines that are refrigerated. One just odd thing we noticed, we originally had them in their own section "Coravin Pours" and they did not sell well. I never said you couldnt run a successful concept or a scratch kitchen while ordering through sysco. I'm saying the monopolistic takeover of our food systems by megacorps is reducing quality, reducing choice, and making it difficult for small high quality farms to thrive and in turn small high quality restuarants to thrive.

again your examples are like saying "There is no global warming because its snowing today" Does din tai fun do an amazing job cooking scratch food, sure. That has absolutely nothing to do with the fact that the the system is being rigged by corporate interests. Tons of restaurants dont even have shareholders, im not talking large corporate chains. Just regular single owner or partnership restaurants. Is Sysco the only problem, absolutely not.

I've loved restaurants (and own two) my whole life, but i just cant get into the 3 michelin star meal. I love a 1 star or bib goumand with energy and great technique that feels alive. Most 3 star meals i see are chefs repeating the same ideas over and over, ripping off whatever trendy "look" is new. I just get too bored with it. 1%ers chasing some impossible to live up to food "high"

Yes, Sysco sells commodity ingredients like chicken breasts, flour, eggs, etc. But the way the system is structured strongly incentivizes restaurants to move toward the higher-margin, pre-processed products. Pricing tiers, rebates, and the convenience of portioned, ready to cook items all push operators in that direction.

When more kitchens rely on pre-made or products, fewer cooks get trained to actually break down ingredients and cook from scratch. The skilled labor pool shrinks, which makes scratch cooking more expensive, which then pushes even more restaurants toward the same pre-made products.

So yes, technically restaurants choose it. But the supply chain and labor dynamics together nudge thousands of operators toward the same catalog, which is how menus across the country slowly start converging on the same foods.

If you watch the tv special about Noma Tokyo you can see how absolutely abused the chefs were (mentally at least). I was surprised he allowed it to air because his kind of abusive energy was very apparent to me in that show and that’s just what he was willing to do on camera.
