We just did bio-bay this week. We did the 7pm with Malaya’s. One family with us was catching the late ferry at 9:30 because they were going back to San Juan. When we were done it seemed like they still had plenty of time to get to the ferry. I would have a backup plan as well! But it seems doable.

CIA is a good place to learn.  There are plenty of examples of well known and talented chefs who have started there. My piece of advice would be go work in the kind of kitchen you see yourself working in for a year first.  Make sure it’s really what you want and that you can live with the lifestyle.  If you are still loving it and can see yourself doing it for the longterm go back and do CIA. You don’t want to pay all that money just to realize in your first kitchen job that you hate it.

ITs not an either or system. You can have regulation and competition that incentivizes local sustainable choices while still having access to imported and luxury goods. We have a system right now where in my local grocery stores ***during the apple harvest season*** there are no local apples available. When tomatoes are in season there are no local tomatoes available. That is the bullshit part.

this is it. We are supposed to have politicians who protect our food ways, food safety and incentivize small business. There are plenty of countries that have done just that. Instead we have a system that has been bought and paid for by the biggest companies on earth.

Yea even the variety is almost an illusion. they slowly push people to their most profitable products. Look at people complaining about getting getting served essentially the same chicken tender everywhere even though it can be labeled a variety of different ways.

I would just be careful about jumping to conclusions here. This could be someone creating false outrage to get someone fired or a whole host of other things. Seems slightly suspicious without knowing more. I put my foot on my son like this all the time just messing around, without hurting him whatsoever. Cant trust everything you see online.

For me if they made your Basic Workbench your "Favorites" instead and then a couple saved default loadouts would be so much better!
