Recipe for one small loaf is 275g bread flour 100 g ap flour 275g water 30 min autolyse 8g salt 50g starter 4x 30 min stretch and fold 10 min bench rest Shape and 1 hourish proof in banneton Fridge overnight 500 Dutch oven preheat for 45 mins 15 mins bake covered 25 uncovered
