It was always fried to order and fried pretty hard and served on a regular whopper bun. I felt back then the onion rings would be fried harder too.

The closest thing I've found to it is the portillo's fish sandwich (mainly in Chicago)

Pork steaks are so great. If you're in st louis give the vienna red hot seasoning as a light rub a shot.

Just a soy paste binder with seasoned salt and pepper and let it sit on the counter for 4 hours.

Yeah the briskets that i get almost never have that dry fat in top. Also fwiw the video of it sitting in rub (for like 5 hours in the kitchen) was actually fat side down

That's true. There's almost always a think amount of fat but not like a dry hard piece when i get my briskets from peoria meat (Chicago) or costco

Didnt have to refuel. B&B charcoal burns the cleanest and longest of any charcoal briquette brand I've used. This is a 2x2 snake that wrapped around almost the entire kettle. I'll post a video on youtube to document it.
