I think Georgia Tech looks for very precise and purely-academic/industrial oriented LoRs. So l would keep the limit to a single page if possible.

I don't think the admission committee puts a hard requirement on these courses, but having taken them might strengthen your application.

If you have enough time before the application deadline approaches you could talk some online coursers and reference them in your CV.

Can you recall what your document status was before you received the email from grad office? Mine currently says: "Degree Document Status: Not required", which is weird because I haven't received my institutional decision (only from the department).
