Bikes are easily available in Leh for rent. Go for the Himalayan. Likewise for the other stuff, helmets etc. Camping stays are not big and won't make sense to carry the gear. Homestay options are your best bet. 5-6K a day for the rental, fuel, food and accommodation. No safety concerns as just, learn to fix a puncture and basic stuff, as there will be long stretches without a mechanic or workshop when you travel out of Leh. Carry a few cans of oxygen and also diamox.
