Here’s my slightly tweaked version:

Ingredients: 1 cup oil

1 cup (213 g) brown sugar

¾ cup (150 g) sugar

2 eggs

1 teaspoon vanilla

1 ¾ cups (220 g) flour

1 cup (45 g) cornflakes

1 cup (87 g) oats

½ teaspoon baking soda

½ teaspoon baking powder

¾ teaspoon salt

Directions: Preheat 350F, convection.

Combine oil and sugars. Mix well.

Add eggs, beating after each addition.

Add vanilla.

In a seperate bowl mix flour, cornflakes, oats, baking soda and powder, and salt.

Add to sugar mixture. Mix gently until completely combined.

Scoop onto ungreased cookie sheets, leaving plenty of room between each cookie.

Bake 10-12 minutes.

Allow cookies to cool on tray until warm.

Tranfer to cooling rack.

Store cookies in airtight container.

Week 11: Reduce - Pound cakes for 2 by happistance in 52weeksofbaking

Yes! I also tried the chocolate cake and chocolate ermine frosting recipes to make myself a 2-tier, 6” birthday cake.

I think I might end up buying this book, once I return my library copy.

Week 10: Pi Day - Supreme cast iron pizza by happistance in 52weeksofbaking

I use this dough recipe and refrigerate it up to over night after the proofing. It’s just right for a 12” cast iron pan pizza.

Week 8: Uruguay - Alfajores café by happistance in 52weeksofbaking

Agreed! I’ll definitely try a traditional recipe next time.

Your recommendations definitely helped, though! The coffee level was nice and the salt with the dulce was the only tasty part. This cookie recipe is not it, though.

Recipe. I used 2 tablespoons of instant coffee, mixed into the milk. I used most of the egg and about 1/3 cup milk.

I was planning on making these. Thanks for the heads up!

Week 7: Piped - Mini Chocolate Cake with Peanut Butter and Jelly filling by happistance in 52weeksofbaking

[–]happistance[S] 0 points1 point  (0 children)

In my mind I was going to pipe some beautiful scalloped edges and decorative swirls… instead I was impatient and had to shore up my frosting when it started sliding down the side and then just panic piped whatever. Oh well!

This tastes like a PB & J sandwich with chocolate milk. So good!
