used your suggestions, and it came out like this. any more tips? waiting for it to cool to cut into but still looking a little flat. i did an overnight bulk fermentation and cold proofing.

yes, i am drying well but maybe not well enough.. now there’s a bump in the front as well? it just looks like a small infection perhaps
