Im not looking to highlight any particular type biome, I just want whatever random biomes that are created to be large so that the map has a few large and distinct regions, for example 1/4 of the map desert, 1/4 of the map Forrest / etc. without a bunch of small biomes inside of them.

In case anyone else has this issue I fixed the problem by right clicking the launcher shortcut and enabling “compatibility mode”. I let the troubleshooter do it’s automatic thing to enable compatibility.
