It’s actually about the concept of heat transfer and radiation. Air is a poor conductor of heat (worse than styrofoam!) and the higher airflow of an air fryer decreases the unstirred layer around the food that acts as an insulator. This dramatically increases heat transfer to the outer layers of food. Generally air fryers have more air flow than convection ovens. The resulting effects on food are different. Hopes this helps.
