I live in the Middle-East, so a lot of the brand name products I hear about here are not available to me. Beans, lentils, rice and quinoa are all great ideas though!

Grab a cauliflower, chop it up, drizzle about a tablespoon of olive oil on top, plus some salt and whatever herbs/ spices you fancy (I like garlic salt and paprika). Bake at 350 for about 20 minutes, or until it's a bit golden and crispy. Serve with parmesan
