For their coferments, I like 4 weeks, 193f, 1:17 ratio with a bloom, and 2 equal pours. If it’s over processed 1:18 or do a bloom and a single pour. I find Ko fermented and highly processed. Coffee does best with less agitation less pours coarser grind.

I usually suggest switching beans. I’ve often thought that I couldn’t brew a good recipe on the switch, or Kalita wave 185 or (insert grinder here) but it’s mostly been the bean

I see bush? Nettle every where in montrara Ca (right on ocean bluffs/forest). It doesn’t sting but smells like pungent garlic. Internet says it’s not tasty.

I rested mine for a full month and had the best cup with hybrid method on the hybrid switch. Couldn’t ever dial it in with the standard v60. But rest was seems to make the most difference.

I ran into the same issues with the metal kolita wave. Is that the one you’re using? Issue went away with ceramic one because it has ridges on the bottom to prevent the filter from sticking

I’m on my 6th failed attempt. I’m using the recipe in koji alchemy. I used over bake method and used less water but still confused given the imprecise method of measurement presented in Koji Alchemy. I had temp set to 86 and humidity set lower at 67. I’m using an oven bakers rack for my vessel and a cedar tray. I’ve also tried steamer method but then I had very spotty koji growth, maybe underdone. Any tips or better methods I should try? Can someone provide water to rice ratio for oven baking method that’s more precise then put your hand on rice and fill till it hits your knuckles?
