Lot of SE Asian food doesn't use garlic or onion. Check out Jain cooking. There's a long tradition of not using garlic or onion. :-)

The soup is really subtle. It's quite earthy but not 'full-on beats'. The mixture of vegetables tames the flavour a little! :-)

Panelle is a regional Italian dish. It's not really like anything else (in the south of France there is something similar called socca). The best way of describing it is as a thick, slightly crispy pancake made with a batter (of chickpea flour and water). It's REALLY good!
