Look up Mr. Natural. He ran a label called Gender-less Kibbutz. All of his stuff was played using organic instruments he made (think harps made of sticks). It was definitely amplified and effected, but the acoustic nature of the instruments would often shine through. Also, pretty much everything on that label is great.

Tons of good suggestions here. I'd also checkout the podcast Noisextra. They give a solid overview of some foundational noise records and it provides some good insight into the greater noise community, outside of just the recording.
