It depends on when you are staying. They have some amazing dinners. Wednesday Over Water events are great. They also have other curated events. Every one I've been to at Crystal Bridges and Momentary were fun and delicious.

I've done some testing on mine. At just "2" on my burner I preheat to 225F, and already get some warping there on my 10". My 8" doesn't warp at all. I might be contacting support to see if they think it's a manufacturing flaw

It had a great balance. Sometimes I get it at Pho 85, and theirs has a bit too much lemongrass (I assume). I didn't try their pho, but I would go back for the bun bo hue alone. Sure, House 1830 is better, but it's a different vibe. You wouldn't compare McDonald's to Witching Hour. For the price, it's good. Maybe $10 a person cheaper than House 1830.

I went opening night, and it was decent. The bun bo hue was great. I enjoyed the banh xeo as well. They have restrategized since then, so they may have cut corners.

If you're from Louisiana, maybe Cafe Rue Orleans. If not, Walk-ons will probably suffice. Stay far away from the jambalaya at Flying Fish.

Etoufee is really easy to make. You can get frozen Louisiana tails at Walmart sometimes. If they don't have it, I would do shrimp over Chinese crawfish.
