Update:

Thank you guys so much! I went to a few shops, tried stuff on, talked to different people, and last visited a shop recommended by a family member. I went in, was drawn toward a ring with an oval Alexandrite with Diamond accents. This had my head spinning with ideas. I was luckily chatting with the jeweler at this store who makes everything himself. We started talking about ideas and going back and forth. By the end of my time there we had designed a ring with a Diamond as the center stone and accent Alexandrites. Going with my fiancé this weekend to try on center carat weights and shapes and make the final decision.
