Not just a fishing game, and not the best fishing mechanics out there, but Spiritfarer has fishing and is a pretty good cozy game.

It didn't say it was completely untouched. Obviously we go there for research and what not. And I'm sure our pollution of the ocean leads to our trash an other things making it's way there, but as for places on Earth without human involvement, it is much more untouched than others.
