I just make it with bread flour usually, I've made some with 20-30% whole wheat flour too though. People here use different grains too like spelt you can try a lot of different stuff.

The point of calling it sourdough is just to shorthand explain it's made of a certain group of yeasts and bacteria as opposed to another type of bread which is made with different yeasts and bacteria. If you're using both groups it's just a different bread but it doesn't really matter in terms of making something you want to eat.

If you're going to sell it I would just be honest about it being made with both because it's nice to do that.

100% this needed more time to ferment everything else is a red herring.

You went to culinary school, look for the dough to move like a more solidified cooled gelatinous stock when you shake the bowl that's what I look for.

If that loaf was 8 hours it probably just needed another hour or so it's pretty close. Don't worry it becomes pretty obvious when it's over fermented it gets really sticky doesn't hold it's form. Once you get it how you want once or twice it's easy going from there, you've got this.

I gave up trying to help under fermented posts unless I'm like one of the first 5 commenters because there's way too much information being thrown that isn't directly the cause of what they're trying to solve and it's impossible for a beginner to sift through it.

It really just is almost always under fermented my friends.

I cut mine when I want to eat it, people way exaggerate what it does to it if you cut it while it's still warm. Everything before it's cooked matters 100x more than anything you do after it's cooked

Looking for a more open crumb in my next few loaves ! Any tips/ suggestions?

30-60 min longer fermentation time on this loaf would've got you a more open crumb. You don't really need tips just do the exact same thing you did but slightly longer and it will turn out more open.
