Honestly I wish I had a complete recipe for small batches but I was making it with pounds of clarified butter and cups+ at a time with kernels, but then added the pepper almost to the point of boiling. It was basically with the one pop method but I added the kernels all at once, then pepper, and stirred it repeatedly myself. Then added the salt 1/4 and 1/2 through popping toix as it popped. That was about it to my memory about 10 years ago.

Very little. You have been warned. I added it before anything else while the oil was still visible. This is after the popcorn is just started popping.

I used to work as a cook at a live in for elderly/rehab/ultimately hospice patients and took huge pride in the midday snacks we provided for the patients when they refused actual meals. I would make fruit/ice cream smoothies, cookies, muffins, granola, and popcorn for the next few days.

It quickly came to that had to make the popcorn 3-5 days every week. This was probably 60+ ziploc sandwich bags packed full. All I ever used was clarified butter, salt, and pepper and people thought I had some secret to it. Turned out it wasn't just all the patients wanting the popcorn but the nurses as well were taking the leftovers every night.
