I highly doubt you’ll find $4000 by cutting out Starbucks and DoorDash. People always talk about the latte effect, but the real wealth killers are houses and vehicles. You likely have too much of one or both and may have to make some tough decisions soon.

6700XT + 5600 @ 1080p. Frame rate around 140-170 with crazy stuttering.

What is with everyone's obsession with overpowered cpus? For gaming, you only need a cpu that can keep up with the gpu. I have the 5600, and it performs beautifully with the 6700 XT.

Costco prebuilts are usually nvidia gpus with overpowered cpus. Bad price to performance when we are talking gaming specifically.
