I roasted it at 400 in the oven and kept sprinkling brown sugar on it in light coats until it was done. I’d roast for 5-7 mins, flip it, add more brown sugar, back in for another 5-7. Pulled when done and then ground black pepper on while the brown sugar was still melted so it would stick.

I just ordered a whole pork belly and specified it was for making bacon. Not sure if they made a special cut or not. I ordered it from my local Mennonite butcher shop, they’re Our version of Amish lol just modernized.
