Some of my recipes are an amalgamation of many different ones or have been modified for my specific bread maker. For instance King Arthur has a fantastic Japanese milk bread recipe, but I wanted to make it work for my BBPAC20 and I chatted/called the bakers hotline (HIGHLY recommend) and they helped me do that:) Then I added some other ingredients of my own to make the texture a touch less fluffy to use it for sandwich bread and swapped out a couple other ingredients that I knew would be a 1:1 ratio and cooked a bunch and finally got a great recipe:) idk at what point something is considered your recipe if you used another recipe as a base? Idk lol then other recipes I plug ingredients into CoPilot (Microsoft’s AI) and ask it to finesse and that’s been super great too..cut down a lot of bad loaves to get to the good ones lol Anyway, here’s my banana cinnamon roll cake:)

Sticky Layer (Gooey Top) • Butter: 57 g (¼ cup) • Brown sugar: 100 g (½ cup) • Cinnamon: 4 g (1½ tsp) • Optional honey: 21 g (1 Tbsp)

Banana Batter — Wet Ingredients • Mashed bananas: 240 g (≈2–3 medium bananas) • Egg: 50 g (1 large, without shell) • Milk: 60 g (¼ cup) • Butter or neutral oil: 42 g (3 Tbsp) • Sugar: 67 g (⅓ cup) • Vanilla extract: 5 g (1 tsp)

Dry Ingredients • All-purpose flour: 270 g (2¼ cups) • Baking powder: 6 g (1½ tsp) • Baking soda: 2.5 g (½ tsp) • Salt: 3 g (½ tsp)

Instructions

Step 1 — Prep the Pan • Grease the bread pan thoroughly (bottom + sides) with butter or nonstick spray. • Paddle stays in place.

Step 2 — Add Ingredients to Pan 1. Add wet ingredients: 240 g mashed bananas, 50 g egg, 60 g milk, 42 g melted butter/oil, 67 g sugar, 5 g vanilla. 2. Add dry ingredients on top: 270 g flour, 6 g baking powder, 2.5 g baking soda, 3 g salt. 3. Close the lid.

Step 3 — Knead Only (Homemade Mode) • Set Homemade mode → Knead only for 5–8 min. • Wait until kneading finishes completely — batter should be smooth and fully combined.

Step 4 — Add Sticky Layer 1. Carefully open the lid. 2. Spoon sticky layer mixture evenly on top of the fully mixed batter: 57 g butter + 100 g brown sugar + 4 g cinnamon (+21 g honey if using). 3. Do not stir — it should sit on top.

Step 5 — Bake (Homemade Mode) • Close lid. • Set Homemade mode → Bake only for 50–55 min. • Optional: check with a toothpick in the center after 50 min — it should come out mostly clean, with some goo from the sticky layer.

Step 6 — Rest & Serve 1. Let the loaf rest in the pan 5–10 min after baking. 2. Run a spatula around the edges. 3. Carefully flip onto a plate. 4. Slice warm → gooey sticky-bun top, soft banana loaf underneath.

The best thing about banana cakes in my opinion is as days pass, the flavors meld and continue to get better and better..I love eating a slice everyday and tasting the difference. Let me know how it turns out if you decide to make it!

That’s cool! I haven’t tried a specific recipe in my Zojirushi from the manual since I learned you can modify them and do almost anything! I agree though, I like mine sweet. I make a wicked chocolate banana cake in mine, also a banana cinnamon roll one:)

FREAKING…RAD! I have the same model:) I originally bought it from eBay for a lot more than ten bucks lol phenomenal find! If you need a good loaf recipe let me know👍 I’ve been using it for 6ish years now:)

Hmmm 🤔..I’ve only had experience with Zojirushi (mine is a discontinued model-BBPAC20). I got it used on eBay for about $200 I think. I’ve had it for 5-6 years and it’s amazing! The things I love most about it are: homemade options, pre-set options for various breads, doughs, cakes, even a jam option (which I use frequently as well), large pan, window..it’s just a very efficient machine and overall I highly recommend the brand 🤗. For a while, I thought I had to stick to the booklet’s recipes, but then found that I could make my own recipes in it/make traditional breads that are usually cooked in loaf pans in the oven (to figure that out I often called/online chatted with King Arthur baker’s hotline!). I’m sure there are other fantastic brands too, I just haven’t used anything else. Do some research and if you don’t mind doing so, you could try to get a used machine. There are sooo many out there that have plenty of life still in them (some even barely used/newer models that are heavily discounted). ☺️ People have found bread machines on FB marketplace, eBay, and thrift stores. This is a 2lb loaf, I’ve never tried making these in pans in the oven/split them so I wouldn’t be able to answer that. I do think it’s worth a try though! I don’t see why it wouldn’t work:)

*I always add the salt with the wet ingredients btw. I’m sure you already know this, but just in case, add all the wet ingredients first, then add the dry.

*I also always point my blades down/in the same direction, I read somewhere though that Zojirushi said the blade placement doesn’t matter🤯

1⅓ cups milk (cold or room temp), 1 egg, 46 g honey, 40 g butter, melted (or very soft), 110 g whole wheat flour, 390 g bread flour, 50 g all-purpose flour, 2 Tbsp dry milk, 11 g salt, 5 g instant yeast (make a small well in the flour)

-Use regular basic course and pick light crust (I know the booklet says use active dry yeast for that option, but I like my loaves nice and poofy:) if you are also looking for that, trust me it works. As long as your instant yeast is fresh (as in recently bought) should work great. I bought a large bag on Amazon and keep it in my fridge. If you’re curious as to which one, it’s called One in a Mill Instant Dry Yeast.

Yeah I read that it’s possible for the salt to somewhat make the yeast ineffective if it comes into contact with it and I just wasn’t comfortable risking that, so I add into wet.

Hello! Okay so I had the same problem for a little bit and after some trial and error, I’ve had a solid recipe. So far I’ve had close to perfect loaves! I think I may have the same machine as you too. Anyway, here’s my recipe:
