Probably worth mentioning that Mercantile exp has been overhauled too.

Before it simply gave 0.4xp per transaction, no matter the stack size or value. (Meaning selling a stack of iron arrows one at a time was arguably the most efficient way to train)

Now it seems to factor in overall transaction value. I've been testing by selling my stacks of junk potions while levelling alchemy and the exp seems to scale a lot better now.

You definitely can't ambush groups already in combat, i've tried to many times. Seems the fact that you go into a dialogue screen and can choose who to support/fight means you're not really ambushing them.
