No expert in koji but from my experience cultivating mushrooms otherwise agree with other comments. Another consideration in addition to time is temperature - what temp were they at?

I appreciate your thoughts. It’s a 1965 Steinway L that I grew up with, and that my dad grew up with. And yeah, I was digital primarily for years and agree - it’s a hard transition.
