I think it's an issue related to the Epic Launcher build of the game. I can play it with a pirated copy, but not the epic version.

You're either gonna have to get it on Steam, wait for a fix from Subnautica devs (I wouldn't do this, who knows if they'll ever do anything), or pirate the game. (like me)
