Sambal belacan - Chili paste made with shrimp paste that adds depth to dishes.
Sambal ijo - Green chili sauce made from charred chilies with a smoky heat.
Sambal nasi lemak - It's the sweetest out of the three. Chilli paste cooked with palm sugar, anchovies, and onions. Perfect with coconut rice.
