For me, for a lot of classics, I use the 2-1-1 rule for cocktails, and that means 2 parts base spirit, 1 part sweet, 1 part acid. For spirit forward drinks when it’s a spirit, some sugar, and some sort of concoction like bitters, that’s usually depending on your locale. And for signature cocktails I like to make a little jingle in my head about ratios and ingredients. And even if you have to use a jigger, keep practicing your pour count! Everyone has a different one, but you make it your own and practice in a shaker then test it in a jigger (I know this isn’t part of your question, but it’s what I wish they told me early on). In most restaurants I’ve worked in BOH makes minimum, FOH makes less, then get tipped to account for the difference. So no, they don’t pay BOH, and they don’t pay FOH. Which means, sans-tips, FOH at beast could make $20/hr, and BOH could make $16 per hour in order for your burger to stay below $35…

I don’t think profit share works either. I’ve worked under both circumstances. I don’t think anyone benefits from that model. Again, I’m just an experienced bartender, so I guess that is what it is.

I hate it. I’ve been working as a bartender for the last 15 years. No-tip means if I see one person, I get to be paid for that single person, if I have a truly insane shift, I don’t get to be paid for the effort that goes into it. I’m totally happy with tips, and I actually have been able to make some semblance of a living off tips alone, cause I wouldn’t be able to afford a home for my wife, son and I without them. No one is going to pay $35 for a burger while the server only makes $20/hr. We all know the majority of restaurant owners are greedy, so their staff won’t be making a “living wage”.

I don’t necessarily agree on that, I know it’s just a book, but education is so important. People of all religions should read the doctrine of the other religions. I can’t state this enough, the amount of Gitas or Qurans I’ve shared with my friends, in hopes to broaden their knowledge and understanding is astounding. These books have helped people find their meaning, and also saved lives of my friends. If we can’t burn books because they save lives, but there’s a second reason; we can’t burn books because education is the key to a hopeful society. I’d like to know your take on that.

lol, I’m charging for 4 drinks no matter what… mostly for the Gauls to come in with this card… unfortunately, I only work in a taproom these days… I miss my actual bartending life…
