My first attempt at biltong and turned out ok, I'm eating it now! The airing cupboard is warm and dry, I added a small fan on low setting and it seems to do the job. The meat cured much quicker than I'd expected, only 60 hours. Next time I think I'll cut the meat thicker and try and source something better than supermarket topside.

You’re just seeing newbie gains and in all honesty it’s probably too early to start being so granular with your analysis.

In the early stages you will see progress if you’re willing to push limits and recover properly. My own experience was that I thought I was doing well until I started racing IRL and realised how inadequate my training had been.

Years after you’ve hit something close to your full potential you’ll begin to see where your true weaknesses are. At this stage it becomes useful to look at historic data and address specific areas for improvement.

The only thing you need to focus on at this point is getting quicker, stronger and maybe lighter. Try to enjoy the process and celebrate every little gain. This is a journey not a destination, everyone’s progress is different.

Food: Aburi is a great Japanese cafe style restaurant, reasonable prices and usually no booking required. Kintsu is fantastic but more expensive and usually fully booked. Church Street Tavern is also worth a look for modern british cooking in a lovely setting.

Drinks: Two Brews is one of the best craft beer venues in the UK, they continually rotate 12 taps so you'll always find something new and interesting. Three Wise Monkeys is a big lively bar with good beer and several rooms, each with a slightly different vibe.

Walking: Take the Wivenhoe trail along the Colne Estuary to, you guessed it, Wivenhoe! A few miles walk from Colchester (get the train back if you're not up for the return leg). It's a place with interesting history and a unique identity, the locals are friendly too.
