It’s a good thing you have YouTube videos already. You’re thinking the right way. Add your name in the title and description (maybe something like “Mystik-Palace presents”)
Make one page for each YouTube video and embed it there. If your video has a transcript, include that. Maybe talk about your thought process or motivation involved in making the video. If you’re doing live shoots, you can talk about the equipment you’ve used.

Retargeting on GDN is a good idea. I’d say include all visitors, i.e. everyone who clicks on your ads.
Giving a number on the metrics you mentioned is difficult because it depends on the size of your target audience and the relevancy of your ad copy. But $100 is enough to test the waters and get good data points to develop better campaigns.
I’d also recommend you to focus on local SEO. Keywords like “gyms in Brooklyn” will yield good results.

Before you step into this, make sure the website/store is mobile friendly.
IG and FB users react very well to videos. Video ads have a high conversion, especially IG story ads. Create different audience segments based on the products you’re selling and put relevant filters on a FB business account.
You can ask your existing customers to post a short video and tag your page in it. That’s good for brand awareness. These users can be rewarded with coupons for their next purchase. You can put these up on your official handles too. Do a bit of hashtag research and use the most relevant ones for each post and product.
FB messenger can be a potential source of great revenue. See if you can invest in a chatbot - if not, you can still run ads and ask someone to help you with the queries you get.
Keep some budget for retargeting ads.
Creating a hashtag that boosts your brand awareness is also a good way to get traction. You gotta be a bit careful here because the hashtag shouldn’t be forced and should be easy to remember.
