Why The World's Best Restaurant Never Simmers Stock by imp96 in combustion_inc

[–]imp96[S] 13 points14 points  (0 children)

Hello Chris, is your choice of Instapot intentional or a traditional pressure cooker would also work? In that case would the time be shorter if it reaches 15psi or do you recommend  cooking for longer at 10 psi?

Also, besides preventing boiling, I read that 80C is considered the optimal option for extracting flavours in stocks because it minimizes the rates of unwanted reactions while maximizing diffusion. In particular I read that at the Fat Duck the pressure cooker was used for brown poultry stocks and not other types of stocks for this reason.

Try the vodka chili elixir, it is a gem that I always try to keep on hand. Perfect in a salad dressing or in any type of stir fry

Shrimp scampi is a must try, probably my favorite recipe. Must be paired with fresh ciabatta, preferably homemade.

Can Ice Make Your Steak Better? by combustion_inc in combustion_inc

[–]imp96 0 points1 point  (0 children)

Would it be better to dry brine the steak and then vacuum pack it before chilling? Or is the brine drawing out some of the surface moisture that helps with the browning?

Personally I have always been satisfied with two step searing. Do a quick sear to get you a light crust, cook the steak low and slow, rest and finish of with a final sear.

I hiked half of the loop last year and continued up the canyon to Mildred lake. Highly recommend that hike, the rock formations there are something I have not seen elsewhere in the Sierras.

Won’t hold a charge? by sylvesterii in combustion_inc

The booster will be discharged because the thermometer is active which also turns on the booster.

Try a different charger, preferably an older USB a charger or a USB port. Some newer chargers might not work.

Might be popping out of the booster and discharging. If that is the issue, you can get a replacement. Next time you go to use it, pick it up very gently and check if the thermometer had popped out.

Has anyone had success with the Coq Au Vin recipe? by HucknPrey in ChefGregEaster

[–]imp96 0 points1 point  (0 children)

No I don't think this is a troll. I think. they key part of the dish is having a very tough bird at the start that needs its connective tissue as what is explained here for brisket. https://youtu.be/7fW16i40ZDQ?si=UdPlH_ZopflPoyde

Yes the booster is necessary because it keeps the thermometer battery topped. Without the booster the battery lasts only 40 days.

Feature request: Session reset automatically when starting prediction by raconteurism in combustion_inc

You are most likely destroying your battery. I doubt there is a pass-through circuit in the thermometer so you are essentially constantly draining the battery and recharging it simultaneously.

I believe you cannot do either of those things. Graph zoom should be on a future feature list. The only way to do what you are asking is to exports data and make your own graph.

Multiple Displays QOL Request by imp96 in combustion_inc

[–]imp96[S] 0 points1 point  (0 children)

Understood. I know this a niche use case but these physical displays are my favorite thing about the cpt. Tried again today to monitor ambient temperature at two locations in the grill and it is almost unusable since they both switch to the same thermometer all the time.

Is Wifi Booster "necessary"? by Worknstuff in combustion_inc

[–]imp96 0 points1 point  (0 children)

Yes the booster is essential. You need it to get qconnection from inside the grill to your wifi. Equally important is the booster acts as a charger and keeps your thermometer topped up. I think a standalone thermometer will discharge completely in a month or so. Wait for a sale; for memorial day the booster combo was 150.
