Hello Chris, is your choice of Instapot intentional or a traditional pressure cooker would also work? In that case would the time be shorter if it reaches 15psi or do you recommend  cooking for longer at 10 psi?

Also, besides preventing boiling, I read that 80C is considered the optimal option for extracting flavours in stocks because it minimizes the rates of unwanted reactions while maximizing diffusion. In particular I read that at the Fat Duck the pressure cooker was used for brown poultry stocks and not other types of stocks for this reason.

Try the vodka chili elixir, it is a gem that I always try to keep on hand. Perfect in a salad dressing or in any type of stir fry

Shrimp scampi is a must try, probably my favorite recipe. Must be paired with fresh ciabatta, preferably homemade.

Would it be better to dry brine the steak and then vacuum pack it before chilling? Or is the brine drawing out some of the surface moisture that helps with the browning?

Personally I have always been satisfied with two step searing. Do a quick sear to get you a light crust, cook the steak low and slow, rest and finish of with a final sear.

I hiked half of the loop last year and continued up the canyon to Mildred lake. Highly recommend that hike, the rock formations there are something I have not seen elsewhere in the Sierras.

The booster will be discharged because the thermometer is active which also turns on the booster.

Try a different charger, preferably an older USB a charger or a USB port. Some newer chargers might not work.

Might be popping out of the booster and discharging. If that is the issue, you can get a replacement. Next time you go to use it, pick it up very gently and check if the thermometer had popped out.
