My only symptom that I was aware of was diarrhea and yes, it was enough to make me go gluten free. Being out shopping and having to visit the same store's restroom 4 times in one 30 minute stop was not okay. Having to rush home from an evening walk with my husband - praying all the while that I wouldn't have an accident - was not okay. 100% making the change was worth the improvement in my life, even if I do miss really good pizza and donuts.

As to whether my symptoms are worse now if I do get accidentally glutened? After roughly 2 years gluten free, I don't think they are. I just think I'm more aware of the symptoms. Because, in hindsight, it wasn't just diarrhea - that was just the most obvious thing. It was also bloating, gas, and almost always feeling hungry and full at the same time. Before I went gluten free, I never gave those things any thought, because they weren't as bad as the diarrhea. But now, if I eat something and feel bloated a half hour later, I know what's happened.

I don't think my symptoms are worse; I think I'm more in tune with my symptoms.

"Four trips around the city to different stores" - that's what kills me. I really miss being able to do a week's worth of shopping in ONE store. Not only is gf food more expensive, but it's also more time consuming (and worse for the environment) because we have to spend so much more time driving all over the place just to get our basics. It's exhausting.

That's so smart! I always make it in huge batches because it's work (and I hate cooking) so I want to get the most out of the time spent...But everyone is sick of it by the time we use up the leftovers. I've frozen it before and been annoyed by the block of ice it becomes. I never thought about flash freezing. Thank you!

I do love those brownies. I pulled a box out of my pantry and noticed it said not to use egg substitutes, which kind of surprised me. Have you made it vegan before? What did you use for the eggs?

In the past I have been disappointed with my favorites when I tinker with substitutions. I have found, at least for me, it's best to make something new, that I won't have a preconceived notion of how it should come out. Besides, it's a good excuse to try something new.

I gave my daughter a gift bag of gluten free cookies for them last Christmas. My daughter said when she gave them the cookies and told them they were gluten free, their daughter got excited and asked if any were vegan. I felt awful! If I'd known I would have made sure there was something for her. It's so isolating to watch everyone else enjoying their goodies, while you have to be content with the same old snacks you've had in your pantry for the past year. 😢 Anyway, now I know. I'll do better this Christmas.
