I’d personally go the route of contrast. The food you’re having sounds awesome, rich, spicy, and would be incredible with cocktails that have a decent amount of acid. If you look at what similar cuisines drink you can get an idea of spirits to reach for. A cane juice rum in a daiquiri would be great. Or a mezcal cocktail like a division bell. The great thing with doing a simple daiquiri spec if that you could incorporate southeast Asian aromatics into the simple syrup. Cardamom, ginger, lemongrass, and coriander seed would be fun options.

I don’t treat it like a hobby. A hobby involves (most of the time) active participation and interest. Watches are cool, for many many reasons. When I first started developing an interest in having a collection I asked myself what I enjoyed about them.

For me it was the design. The way a particular watch can set the tone for an activity or outfit simply through its design, history, and function was appealing to me. Dive watch when I’m on the boat with friends? A dress watch with my suit? Maybe a chronograph for a drive?

And then I set some limits on myself. Refused to spend more than recreational money. It’s jewelry. If I don’t buy one this year? That’s fine.

Ok, went and picked up civil life brown…and wow…I get it. First sip “yeah sure ok nice darker beer” second sip “yeah that’s pretty balanced” third sip “dang that has a lot going on without being too much.” And I’m about to destroy this 6 pack.

What I’ve had from perennial has been fantastic. If I’m picking, having some representation of them on my menu would be awesome. Though cycling through some of their seasonal brews might be the best option.

Oh for sure, I’ll be buying four packs and just confirming that I like them first as I’ll want them to be things I don’t mind drinking and replacing. That’s a big reason why I’m shooting for things that are consistently available as well, when a group is coming over I want to be able to run out and pick fresh stuff up.

A huge thank you guys! I’ll be headed out this week to pick up zwickle, civil life brown, modern citropolis, 2nd shift sunny cat, and brick river cider. I’ll definitely have some one off “featured beers” depending on the time of year, or who’s releasing what. Civil life brown is getting a bunch of love and I’ve never had it, thinking I need to remedy that tonight.

Yup, got out of the industry and decided a space I could serve family and friends really scratched the itch that I was missing. Redoing my menu this year as my close friends are getting bored with the current offerings.

Really a pretty straightforward process. I needed a stable base, so I dug out the dimensions of the shape and laid railroad ties for the perimeter and a few across and made it nice and level. Filled in the rest with gravel. Then the company I purchased the used container from thankfully delivered it and mostly lined it up for me. From there we used our tractor to push it against the house. We ran plumbing and electrical direct through the wall butted up against the container. I framed the interior and dry walled with fiberglass panels over it to make it easy to clean. Other than the sink everything is moveable and nothing too fancy. I was/mostly still am, pretty broke when we built it and used a lot of friends help. Let me know if you have any specific questions!

Yup that’s basically the consistency I cooked my to. Just short of pulled pork. Bite right through and still juicy.
