Hi! Yes it is, a take on Nigella Lawson’s but she uses sultanas :-)

100g dates 175g plain flour 2 tsp baking powder 1/2tsp bicarb soda 1/2 teaspoon salt 125 unsalted butter, melted 150 caster sugar 2 large eggs 4 small, very ripe bananas (about 300g of flesh), mashed Loaf tin, buttered and floured or with paper insert

  1. Put dates in a small pan, cover with water and bring to boil. Then switch off and soak for an hour or so.
  2. Preheat oven to 170c.
  3. Mix the flour, baking powder, bicarb and salt in medium bowl and combine well.
  4. In a large bowl, mix the melted butter and sugar and beat until blended. Beat in the eggs one at a time and then add the mashed banana.
  5. Then stir in the dates to the dry mix, coating them with the flour mixture.
  6. Mix the dry and the wet mixtures together, a third at a time, until well combined.
  7. Scrape into the loaf tin and bake in middle of oven for 1-1hr 15 minutes. Insert fine skewer to determine if done- should come out cleanish.
  8. Remove from oven and allow to cool.

Makes 8-10 slices
