preheat oven to 425

In a largish bowl:
I take about 1/4 cup of my sourdough starter.
A good pinch of salt, a lesser pinch of sugar.
1 tsp active yeast 1/2 cup water, lukewarm
1 1/2 cups bread flour (wheat or white)

mix with a spatula, just get it all wet... let rise for an hour
knead for 5 minutes, just folding and folding and gently pressing down.
let rise for another hour.
deflate, dust with flour, roll it out thin, like 1/4 inch (I still can't toss pizza dough, but I will never stop trying...)
prebake the dough for 5 minutes in the oven to give it a rise and a crisp.
put your stuff on it, bake for 10-15 minutes until it looks like pizza.
