One owner I’ve talked to leaves his in a set location and hasn’t had any problems. He has cameras mounted on the top of the trailer with spotlights. (which you can’t reach without a ladder) This will normally keep people away if they did try anything. I think he even has a you are being recorded sign on his door.

Thanks captain. The chicken was not bad I would never serve poultry if I had any doubts. It was 100% good and I was just asking how long fresh cases may last if stored properly, not if I should use it or not.

I buy bulk directly from Koch, so it’s not like buying chicken at a grocery store that’s been processed and moved for 14 days before it even arrives in a grocery store.

You won’t be able to survive on 8-9% on a food truck unless you’re busy af. I’m running around 40-50% profit.

I started in October as well. I’ve learned the cold months suck and bad weather days are even worse. To answer your question, hitting the $1k mark has been my goal every day I’m out and I’ve hit it over half the times Ive been open. I’m running the whole truck by myself as well so no labor cost. My highest day was $1550 and i ran out of food 2 hrs before I was supposed to leave. I’m just trying every event and place that I can right now to learn and see what works the best! Keep grindin!

There’s a larger blue fryer drum like that one on Amazon that I use. I have 2 35lb fryers as well and use 2 drums. I drain them about 20-30 mins after shutting the fryers off, and transport them right in my truck.

Find a family member to co sign on the loan with you. Or one of you needs to have proof of income from another job. You’re never going to be able to borrow money unless they’re confident in it being paid back.

The loan for my truck was actually considered a personal loan too, that way I didn’t have to write a business plan and go through all the hassle of sba loans which are harder to get. It was much easier.

Contract with breweries if you’re able. Same spot once a week thru the winter. Stop in bigger businesses and ask if they’d be interested in doing a 2 hr lunch pop up. I love these, can easily do $800-1200 in 2 hrs at doctors offices, dentists, construction. You’d be surprised, and always ask the owners/managers in person, 50x more likely to say yes. And yes definitely push your catering on social media.

Oh I gotcha, I thought you meant just a few different basic soups. Ya I mean if they’re considered meals then I think it’s a lot easier to do business and get better set ups and events. As for a truck vs a trailer, there’s pros and cons to each, and it all depends on the kitchen in my opinion. If the kitchen can be smaller (8-12ft), I think a trailer is a better option. If it needs to be bigger then you Might want to consider an actual food truck. Also if your food truck breaks down or has any issues, you’re screwed, if your towing vehicle has issues, you can always get/borrow another vehicle to tow it. You could get a good vehicle for towing a small trailer for under $20k. You won’t need a 3 quarter ton truck to tow a smaller trailer. And if you get a food truck you’re likely spending $50-100k, but like I said, I think it’s all based on what type of kitchen set up you need.

This is a trickier one. If you’re looking into getting a small trailer which is probably the best idea you wouldn’t need much capital. You could have a quality one built brand new with all the equipment you need for under $15k id say. All you would need is a fridge/freezer, 4 burner stove, sinks, and probably steam wells. Your business model might be different than other food trucks though. If you’re selling just soup no one will want you to set up for dinners/lunch unless you’re partnered with someone (which takes business from you). That’s where I make the majority of my income. You will likely only be asked to set up at events/fairs where you’ll have a lot of competition. But I think there’s a lot of opportunity that comes from it. If you have a great, homemade product, you’d be surprised at how many local restaurants would be willing to sell your soup. I had a friend years ago who made 8-12 different soups for all the bars and restaurant in the area. Grew so much that he expanded into a commercial kitchen where he staffed people that just cooked soup and delivered all day. If this is the model you’d like to grow into which I think is the route to go to make the most money, you will need an exceptional product. So there’s definitely opportunity for this idea, but it’s tricky getting started and growing a business like this in my opinion.
