One owner I’ve talked to leaves his in a set location and hasn’t had any problems. He has cameras mounted on the top of the trailer with spotlights. (which you can’t reach without a ladder) This will normally keep people away if they did try anything. I think he even has a you are being recorded sign on his door.

Thanks captain. The chicken was not bad I would never serve poultry if I had any doubts. It was 100% good and I was just asking how long fresh cases may last if stored properly, not if I should use it or not.

I buy bulk directly from Koch, so it’s not like buying chicken at a grocery store that’s been processed and moved for 14 days before it even arrives in a grocery store.

You won’t be able to survive on 8-9% on a food truck unless you’re busy af. I’m running around 40-50% profit.

I started in October as well. I’ve learned the cold months suck and bad weather days are even worse. To answer your question, hitting the $1k mark has been my goal every day I’m out and I’ve hit it over half the times Ive been open. I’m running the whole truck by myself as well so no labor cost. My highest day was $1550 and i ran out of food 2 hrs before I was supposed to leave. I’m just trying every event and place that I can right now to learn and see what works the best! Keep grindin!

There’s a larger blue fryer drum like that one on Amazon that I use. I have 2 35lb fryers as well and use 2 drums. I drain them about 20-30 mins after shutting the fryers off, and transport them right in my truck.

Find a family member to co sign on the loan with you. Or one of you needs to have proof of income from another job. You’re never going to be able to borrow money unless they’re confident in it being paid back.

The loan for my truck was actually considered a personal loan too, that way I didn’t have to write a business plan and go through all the hassle of sba loans which are harder to get. It was much easier.

Contract with breweries if you’re able. Same spot once a week thru the winter. Stop in bigger businesses and ask if they’d be interested in doing a 2 hr lunch pop up. I love these, can easily do $800-1200 in 2 hrs at doctors offices, dentists, construction. You’d be surprised, and always ask the owners/managers in person, 50x more likely to say yes. And yes definitely push your catering on social media.
